Rajbhog ice cream is a delicious Indian dessert with flavors of saffron, cardamom, and nuts. Here’s a basic recipe:

Ingredients:

– 2 cups heavy cream
– 1 cup condensed milk
– 1/4 cup milk powder
– 1 tbsp corn flour
– 1 cup ful fat milk
– 80 gram khoya / mawa
– 1/2 cup powdered sugar
– 1/2 teaspoon saffron threads
– 1/2 teaspoon cardamom powder
– 1/4 cup chopped mixed nuts (cashews, almonds, pistachios)
– silver sheet and dry rose petals for garnishing

– A few drops of yellow food coloring (optional)

Instructions / method:
1. In a small bowl, soak the saffron threads in 1 tablespoon of warm milk for about 10 minutes to release their flavour and color.
2. In a heavy pan or wok transfer the milk, sugar, corn flour and milk powder mix all together and cook on low flame till liquid becomes thickened cream.
3. Take another Pan and cook khoya till the rawness is gone.
Next :
4. fry all the chopped dryfruits till crunchy.
5. In a large mixing bowl, whip the heavy cream until stiff peaks form.
6. Gently fold in the khoya / mawa, milk cream, condensed milk, soaked saffron with milk, cardamom powder or essence, fried chopped nuts, and food coloring (if using).
7. Mix until everything is well combined and the mixture is smooth.
8. Pour the mixture into a freezer-safe container and cover it with a lid or plastic wrap.
9. scoops of the Rajbhog ice cream in bowls or cones, garnished with more chopped nuts, rose petals and saffron strand if desired.
